Food waste is a huge epidemic in our world right now, so why not lend a helping hand by reducing waste and regrowing vegetable cuttings? These 10 water regrown veggies will literally grow again just by setting them in a little bowl of water! So once you've cut that lettuce, place the base in some water and watch it regrow! This will not only help with waste, but it will also cut down on your grocery bill, and ensure that you're eating even more veggies (which, if you didn't already know, are VERY good for you!).

10 Water Regrown Veggies

Guideline:

  1. Most veggies only need about 1/2 inch of water in a shallow bowl or a tall glass.
  2. Use shallow bowls for veggies such as lettuce, bok choy, cabbage, etc.
  3. Use a tall glass for long veggies such as green onions.
  4. Change the water every 2-3 days to ensure there is no slime and/or rot.

#1. Bok Choy

Bok choy is a delicious vegetable which can be regrown in water! Simply cut off the bottom of the stalk and place it in a shallow bowl of water. Within a couple of days you'll start to see growth!

#2. Cabbage

Place the root end of the cabbage in a shallow bowl of water and watch it regrow. Be sure to harvest when it's small for optimal flavor!

#3. Carrot Greens

Although you cannot regrow the carrots themselves in water, you can regrow their green tops. Do this by placing the cut side of the carrot (where the green top grows) in a shallow bowl. Use the green tops in salads or to make delicious pestos!

#4. Celery

Celery stalks will take a while to fully grow, but it's well worth the wait! Simply cut about 2″ off the bottom of the stalk and stick in a shallow bowl with water.

#5. Fennel

Making sure to leave the roots intact, cut the bottom 1″ piece off the fennel and stick it in a shallow bowl of water.

#6. Garlic Chives

Garlic chives are actually the greens that grow from the tops of garlic and are delicious when added to soups, salads, and baked potatoes! Simply take a garlic clove and place in a small bowl of water, making sure NOT to submerge the entire clove. Within a few days, you'll start to see the green tops sprout!

#7. Green Onions

Keep the white part of the green onion along with any of its roots that may still be there. Submerge the white part in a tall glass of water and watch it grow!

#8. Leeks

Cut the bottom 2-3″ of the stalk and place in a bowl of water. The growth will come from the center of the plant.

#9. Lemongrass

Cut the bottom 2-3″ off the stalk and place in a tall glass with water. New growth will come from the center of the plant.

#10. Lettuce

Place the bottom part of the head of the lettuce in a shallow bowl and new growth will start at the center within 2-3 days. Within 2 weeks, you'll have new lettuce leaves!
